Animal Totems

Have you ever been drawn to a particular animal in your life? The native Americans instilled great importance in animals and what they represented, and the messages that their presences communicated to the average human being. Butterflies represent profound change & rebirth. I always find that when I see bright red cardinals fly into my life, extreme success and abundance in career & financial matters is always around the corner. Horses, a love of this majestic animal is a passion I adopted from my mother, represents an extreme personal drive, passionate soul and an insatiable appetite for freedom. Dogs represent bravery, devotion and protection. Wolves (the animal I resonate with the most) represent intellect, intuition, and instinct. Even snakes who represent mysticism, regeneration, and transmutation ( the shedding of old habits and emotions) Plus spiders who represent patience and creativity serve a positive meaning in the grander scheme of the animal kingdom.

Partial Solar Eclipse & New Moon in Cancer

I have had me one super moody moon energy kind of day, let me tell you….. Which makes perfect sense with the new moon today and a partial Solar eclipse in Cancer. The sign that represents the moon, and then moon in astrology represents water…emotion…intuition…psychic ability and empathic capabilities. So all of this Cancer energy has been tripled and will continue so throughout the eclipse season. Eclipses bring about new opportunities- So for an indication of where the solar eclipse will be effecting you personally it is a good idea to take a look at where Cancer is in your chart.

The Sun opposing Pluto will create a bit of an inner crisis with your self-esteem in some manner however. 

Along with Pluto in retrograde and the new moon shows us that this is a time to cut out the negative, and controlling aspects that have been secretly sabotaging your best efforts for abundance. Big exciting opportunities are on the horizon and eclipse season as hard and difficult as the energy is to handle, you must remember it truly is a blessing. Spatchcock Dutch Oven Chicken Roast

Spatchcock Dutch Oven Chicken Roast

Ingredients

  • 1 whole Organic Chicken (spatchcocked)
  • Buttermilk & 1 T of minced garlic
  • 5 T of Butter (I use Kerrygold)
  • 1 T of Herb de Provence
  • Salt & Pepper
  • 1 C of Chicken broth
  • 1 bag of mini potatoes
  • 1 C of chopped carrots
  • 1 Lemon + Zest

Directions

You take a whole organic chicken and soak it overnight in the buttermilk and the garlic.

Spatchcock the chicken (removing the backbone and then flatten the bird out) Season the bird with herb de Provence , salt and pepper.

In your dutch oven melt the butter over medium heat and fry the chick, breast side down for about 5 min and then you flip and do the same for another 5 min (be careful not to be too aggressive and tear off the crispy golden brown skin.

Remove chicken and let set on a plate.

add potatoes and carrots and cook for about 3 more min. Then add 1 c of chicken broth and deglaze the pan. add chicken back in and tuck the veggies around chicken. I sprinkle more herb de Provence, cover, and cook in 375 degree oven for 1 hour. Baste with butter and lemon juice with the lemon zest in it. Enjoy!

The Natal Nodes

I have heard so many other Astrologers speak about how understanding Astrology is akin to understanding a different language. Just because you do not understand another language doesn’t mean it isn’t real. One of my favorite aspect of the astrology natal chart is locating where your North Node and your South Node are located. The importance behind this is simply the Nodes, in a natal astrological chart shows where you are going (what you are striving to evolve into) and your South Node shows where you have been. The energy and problems you bring from your previous lifetime.

Depending on your belief in reincarnation, the North Node gives you a glimpse as to what you should be working towards to achieve inner peace and progression in this particular incarnation. Your South Node is an indication of your previous incarnation. Where you came from and what you are trying to grow from. Both are vital because as it is essential to know your strengths, it is equally essential to know your weakness as well. Simple Lasagna Recipe

Crockpot Lasagna

Ingredients

  • 1lb of organic ground beef
  • 1 T of minced garlic (optional)
  • 1 C of sliced Bella mushrooms
  • 2 1/2 C of your favorite tomato sauce
  • Fresh Parsley & Basil
  • No boil lasagna noodles
  • 3 C of cottage cheese (or ricotta)
  • 16 oz bag of shredded mozzarella
  • Fresh shaved parmesan & asiago cheese

Directions

Over medium heat, brown the ground beef for about 5 min. Then add the mushrooms and garlic, for for an additional 3 minutes, and add tomato sauce. In your croc pot add a layer of your uncooked lasagna noodles . I break the larger noodles up if need be for a full layer of lasagna noodle. Add a layer of the meat mixture, a layer of cottage cheese, and then a layer of shredded mozzarella. Next I add a sprinkle of fresh parsley and basil. Then I start over again with a layer of lasagna noodle. You continue your layering until you reach the top of the crock pot. On the top layer we add more mozzarella and fresh parsley & basil. Pop the lid on and cook for about an 1 1/2. Then turn off the crockpot & let the lasagna cool and set for another 1 1/2. Plate that baby up & garnish with fresh parsley, basil & parm/Asiago cheese.

What needs releasing?

When I graduated highschool, as a graduation gift, my mother took me on a girls trip to Scotland. It was wonderful, especially the breathtaking beach side views….However I remember as we returned…. With in the next couple of months I had this deep feeling of void. Of an aimlessness, of feeling extraordinarily lost. We all have those moments…. at some point we just feel lost. I pondered & I pondered on this feeling until finally one day as I was speaking to my mother she says ” Kim you need a hobby”…. That’s when I realized that the feelings of being lost had nothing to do with actually being lost… I had just come to a point in my life to where I had no idea who I was….or what I was supposed to be…. My mother was right the best course of action was to pick up a hobby… To figure out who “me” actually was. Self discovery at its finest. I started teaching myself how to cook, while listening to my favorite coast to coast radio show (where my love of all things esoteric truly took off). Researching about meditation, yoga, chakras, essential oils, and fitness (actually getting my tush to the gym on a regular basis). That is what it is all about the journey of self discovery. Of trying new adventures, making new friends, making mistakes, loosing friends, and discovering brilliant miracles of which makes you uniquely you. With this past new moon I truly focused on transmuting all that worry and fear…. I accept that its ok to not have it all figured out. For I am so so tired of following (much less caring about) what toxic negative people’s opinions are… when 9 times out of 10 they are wrong. I do not have the indulgence of worry. My instinct and spirit have never led my astray, maybe taken me on a scenic route, but never astray.

New Moon in Gemini 6/13 ~Abundance Abound

Happy New moon eve to all! I have been cleaning my house like a crazy woman all day. For much like I use the excuse to crazy clean my house when visitors are coming over I also use the new moon as an excuse to crazy clean and set my new monthly intentions off right! I’m very excited about this new moon tomorrow, for not only do I have my rising sign in Gemini but this new moon will be affected by 8 star constellations that will favorably aspect this new moon. We have the star constellations as listed;

  • Bellatrix-The female warrior, woman born under this star constellation are known for mighty tongues. I not only have Bellatrix in my 1st house but in Gemini as well.
  • Capella-Gives honor, heath, renown and a public sense of trust and friendship
  • Phact- The bringer of good news
  • Mintaka-Is of the nature of mercury and Saturn, so there is a karmic element to this star and is known as the star that brings good fortune.

  •  Al Hecka- Give great psychic powers

New moon in Gemini will be an excellent day to study, intensify research on a subject, and really getting down to the nitty-gritty.

I personally intend to get serious with my own nose to the grind on all sorts of important projects that will hopefully launch my own notoriety and success within my career and creative project sector. That is what this new moon is all about. Get your face and your work out there and shine a flood light on it, for now is the time for take off.
