Strawberry Shortcake Girls

Time is fleeting that is for sure. Lately I have been thinking quite a bit by how quickly my girls are growing. Nothing spectacular really…. in fact its a right of passage I suppose, something every parent goes through on a regular basis. Perhaps its because the strawberry fields near our house that we used to go to this time of year, when the girls were smaller recently closed.

I found myself glaring and reminanising over these photos of my girls at the same age strawberry picking. I remember both times were ridiculously stressful, hot & chaotic. Yet when I went over these pictures I found myself in astonishment at how perfect these moments were. These fleeting moments of my little angels babyhood perfectly captured in time.

Then I was struck by the relization that that is life in general. That is the point….. No matter where you are in life…. make sure to breath it in, absorb it…. absolutely relish in it. For it is a fast and fleeting moment like the light to a firefly, but it’s perfect and you will treasure that memory no matter how chaotic it may seem at the time. For it is a beautiful poetic chapter in the story that is your life. One you will read and reread often in your mind.

Below is the recipe of the fresh strawberry cake the girls and I would make each year with all our yummy freshly picked strawberries.

Fresh strawberry cake

Cake ingredients;

  • White cake mix
  • strawberry jello pack
  • 1/4 C Avocado oil
  • 4 Large eggs
  • 1/2 C half & half
  • 1 C of chopped strawberries (frozen or fresh)

Butter cream ingredients;

  • 1/3 C soften butter
  • 3 C powdered sugar
  • 1 T vanilla
  • 2 T half & half
  • 1 C of fresh strawberries

Preheat oven to 350 degrees. I start by adding my half & half + strawberries (whole) into either a blender or food processor & blend it up just enough to chop up the strawberries. Next I mix up the strawberries & cream mixture, cake mix, jello pack, & oil. I used 6 inch pans for my cake, but you could easily modify your recipe for a full size cake or sheet cake for easy transport if needed. To prep my pans I typically grease and lightly flour the the pan and cut a circle of parchment paper to fit the bottom of the pan. Pour your batter half way up the pan.

Since I used 6 in round pans, I baked each layer of my cake for about 20 min each. Test to see if cake is done by inserting knife in the middle of the cake. If the knife is clean when you remove it, it is done. Remove cake from pan and cool on a cooling rack while you prepare your icing & get your second layer in the oven to as well bake for about 20 min.

While your first cake layer is cooling and your second layer is baking, you prep your strawberry buttercream icing. Mix up your butter and slowly add your powder sugar little at a time. Then add vanilla and half & half. Finally I add the roughly chopped strawberries. While I have the icing stiffening up in the refrigerator I then get the second layer out & cooling. When you are ready to ice the cake you put 1st layer down butt up as I like to call it. Place a dollop of icing and smooth out on top. Place your second layer on top of the icing and again place a dollop of icing on top and smooth on top. I then add a couple more dollops and start to smooth the icing to the sides and then smooth it out to the cakes sides and continue doing so until the sides are all covering with the icing in a rouch icing layer. Then I place the whole cake in the fridge to let the icing harden a bit for about 10 min. Afterwards I repeat the whole layering process again and add a fresh sliced strawberry on top.

Mothers Day

Some time its necessary….. Its absolutely essential. Do you make the time for you? Do you even remember who the you is? As a parent espcailly a mother…. We become lost…consumed in the everyday and the sacrifices as mothers we feel duty bound to make. Im not suggesting ton abandon your duties ladies or forget those beautiful souls who depend and love on us. Yet sometimes its important to remember the woman you are. Yesterday, for the first time in like 5 years I took time to finish a second cup of coffee out on my porch, then take a long bubble bath and after that take the time to do my yoga. I pushed myself to forget the guilt. The guilt of being the mom to hand the babies over to the dads. To think and actually enjoy myself first. After all are these not the qualities we wish to instill in our children? I want my girls to remember that being a mother doesn’t mean sacrificing the amazing woman you are & that they matter. They are valid. We must remember to be true to are essence & always set the proper example.

Jupiter Retrograding

Jupiter & Juno on mount Ida

Jupiter went retrograde today and will be so until August 2019. The entire summer to be exact. There is always some sort of planet retrograding at some particular time of the year. Jupiter retrogrades every 13 months for about 4 months. This year Jupiter seems to be revolved around issues surrounding love and relationships.

It is a time of philosophical introverted analysis of what you need to work on to be able to grow in relationships, or the time needed to realize its in your highest good to walk away. This will for sure be the time you realize this relationship is it, it’s worth it & for the good or the bad you will purge ahead, come the end of the summer. Or you may realize you need to let the relationship go to properly evolve more yourself.

The astroid Juno will be conjunct the moon during this period. Juno rules the soulmate, true love and commitment aspect. So this summer will be a true test to either make or break a strong relationship with your soulmate or one true love.

Springtime Garden Crystals

Spring has sprung! and it is glorious. Bees are buzzing…trees and flowers are budding and its just the most heavenly slice of weather one could ask for.

This is the time right here that was created especially for gardners and all you gardener wannabes (that would be me) out there. I have never been a stellar gardner myself…. Despite all my best efforts its always proved a bit difficult for me. Of course as was the case last year the one time I was pretty successful… the rabbits found ways to raid my little garden much to my dismay. I have resorted to just pretty flower pots on the balcony this year. I might pull out a small veggie garden this year but that as yet to be determined.

Anyways I stumbled on the idea of adding crystals to your garden for their energetic properties and just had to share the top four that I personally loved.

Quartz- supposed to be great for cell growth in your plants, the stone to use when setting intentions. So visualizing and setting your intention as you place some quartz around your garden will help.

Moonstone- a stone of fertility and health. This stone promotes strength & is known as a symbol of “new beginnings”. Soothes stressful environments and promotes success and good fortune.

Citrine- This stone is all about success and abundance, which is a win for any garden. The stone that simulates the properties of the sun itself lends warmth, and cleansing vitality to your garden

Moss agate- known quite literally as the gardeners stone. This stone lends grounding to the earth properties. A stone that promotes balance & vitality in your garden.

I also love how these little gemstones make the most beautiful garden decorations. Like like jewels spread amongst your garden. Let me know if any of you out there have had any luck with using gemstones in your gardens, and if so which ones where your favorite?

Honoring Yourself- My Morning Meditation and Yoga Routine

Good Morning! I wanted to piece together a post that was a basic overview of my individual morning yoga & meditation routine. All I did was piece together my favorite energizing and focusing based energy poses, that takes no more than about 10 min in the morning to complete. For as mommas & busy ladies in general we all know how hectic our lives can get. It is utterly imperative to set time aside to clear and center yourself for the day ahead.

So firstly I start off in this pose and take about a couple of minutes to be still & meditate of my energy being cleared, balanced, productive, patient and protected. I try to always make sure to smile during this process because I believe it is a lovely way to set your day with energy that is positive and grateful.

From my meditation I then move on to do some cat/cow poses and make sure to truly pay attention to my slow and steadfast breathing. This is my modified version of childs pose. This is also really great for opening my hip flexors .

Then I go into my camel pose.
From there I transition into my downward facing dog position

After about three good in & out solid breaths I extended one leg behind me and hold for another couple of breaths. Then I sort of arch my foot to the other side and hold the pose again for a couple of smooth breaths.

Next I bring my foot up into my runner lunge position.

After my arm extension stretching, I immediately go into my warrior pose for a couple of nice deep breaths.

From the above pose I then would go back into downward dog and do the entire series of poses again but while using the other leg. Then I make my way back to downward facing down for the final time and then slowly walk forward to mountain pose but while hanging down in rag doll pose.

I typically always finish by slowly rising up into the pose below. I then typically down a glass of lemon water & grab my coffee. There is no set rhyme or reason to it and it’s something I dedicate to for at least 10 minutes in the morning. More is better if you can, but if your a super busy gal like me… I find 10 minutes is more than enough time to realign & to set some amazing intentions for the day. It gives me energy, focus, and all around great vibes to unfold my day to! Namaste!


Emotional Abuse and the Metaphysics behind it.

Humans are dichotomous creatures by nature. We are not only of the physical but the spiritual as well. Many choose to ignore or flat out deny both of these aspects as what we are truly made up of. I preach on a daily basis, to my readers, my family, my friends, anyone who will listen really the importance of nurturing and taking equal care of not only your physical health but your spiritual health as well. It is essential. This is in my opinion what makes abuse (of any form really), especially emotional abuse such a difficult and abrasive wound to overcome and most certainly a veniomous & heinous spiritual crime.

All abuse physical, sexual, emotional ect are horrendous.No matter what the source, all abuse results in lasting, profound and impactful emotional abuse. It is the emotional abuse that leaves individuals suffering in silence, fear, humiliation and often times guilt. Even physical forms of abuse will ultimately turn into deep emotional scars. The wounds may heal but the flashbacks and fear remain leaving a person paralyzed and overwhelmed. Individuals who suffer from emotional abuse often feel their scars are unjustified because there are no physical traces of hurt and pain and often times shame.

A few tips to always remember and push towards in your mind regarding abuse are as follows;

  1. You must make a valid and conscious effort to remove yourself from abusive situations. This of course is not always an option for many who fear for themselves and for their family or find themselves being emotionally blackmailed in an abusive situation. In these cases you must persevere- there are hotlines & counselors reading and willing to help you out of these dire situations. Regardless you are worth fighting for, worthy of being in a safe environment and WORTHY OF BEING HAPPY.
  2. Take a break/ get perspective. Get away or get involved in something that makes you feel like you again. Lifts your confidence and spirits back up. Meditation is my form of taking a break & getting a new form of perspective on myself & how to properly honor myself throughout the day
  3. Counseling
  4. Setting healthy boundaries. No one be it a friend or family member has the right you emotionally abuse and blackmail you. If they think that they do then it is perfectly acceptable to draw that boundary for your own sanity and explain you will not be engaging in a toxic relationship with anyone.

The thing is…. you are not the worlds punching bag, and know matter how many times you choose to excuse the kind of abuse another directs towards you. It is never warranted and most certainly never acceptable. Even if you love someone with all you have, that does not ever justify sacrificing your own well being for another’s frustration. As stated emotional abuse is abuse suffered in silence, confusion and most often times denial. Often time it is truly the most psychologically damaging because it is suffered in silence. It stifles ones spark & kills any sort of confidence.

If you don’t stand up for you, who in the world will?

Partial Solar Eclipse in Capricorn.

Happy 2019! I hope you all had a wonderful holiday season. We not only have our new moon in Capricorn tomorrow, but it’s an uber powerful one because it’s also a partial solar eclipse occuring. A Solar eclipse much like a new moon is where the moon passes between the earth & sun. The new moon typically represents the fresh start of intentions for the month. With the partial solar eclipse involved it will be more along the lines of setting your intentions for the next six months.

This is a strong aspect of astrological energy, especially with Sun Conjunct the moon. All things are possible. This is a time to really ponder on what it is that you want to achieve in the coming year. Focus on what old habits are holding you back and thus need to be shed. Clean and organize your living space to go into this eclipse with a clear and light mind.

Make sure to write your intentions and what you wish to accomplish and grow from with in the new year. The absolute perfect time to set those New Years resolutions!
